You will need to provide proof of dating to the DVLA and the Ducati Owners Club Great Britain (DOCGB) provide that service here in GB.

Yes, I have done this - it's not too bad a process, just make sure you supply all the required documentation.
As Bill says, a dating certificate from a recognised (by DVLA) organisation.
I added pictures of the engine and frame number, and one of the whole bike loosely assembled.
Add a photocopy of your driving licence for proof of identity.
You will need an insurance certificate, this will have to based on the frame number. Insurance companies will generally do this for a month, thereafter you will have to ask them again.
The V55 can be downloaded from DVLA, along with V112 to declare exemption from MOT.
Apply for Historic tax status. Don't forget to sign the forms and enclose a cheque.
You will also need a NOVA, even if you bought the bike in the UK. Can be done online, but more tricky (ironically) if you did buy the bike in Britain. I ended up calling HMRC for help, and - they were most helpful. Sent me a form to fill in, I returned it, and a few days later had an email to confirm no duty payable.
Took about 3-4 weeks. If you have missed something they will let you know!

I believe you actually have to get an MOT certificate with the frame number on to get it registered, I certainly did registering an ex-race bike a couple of years ago. Otherwise its NOVA, DOC dating certificate & some photos as described below. You can then get it MOT exempted afterwards. Not a quick process at the moment, the DVLA apparently has a huge backlog.

Interesting, I have registered three imported bikes, two from Spain and one from the USA, and none required an MOT. I completed form V112 to state that the bike was MOT exempt (over 40 years old) and this was accepted without question.
This meant that I could continue to work on the bikes before they were roadworthy and have a registration ready to go when they were finished.
After rebuilding a bike, you may feel reassured if you did get an MOT however.

Back in February it took 3 - 4 weeks to register the bike, and last month took 3 weeks for a replacement logbook for a different bike.

The pingdemic may of course have changed that.
