FYI all,
I had some trouble finding one of these for free. It contains the collected 68-73 Info printed in '74. The '74 edition was in two parts. Unfortunately only part one is available here.

You mentioned the existence of two parts of the manual, which seem to be the versions I will quote below.
As far as I know, there is no complete workshop manual available for the widecase models. Ducati issued a supplement to the n/c manual, which you can download here at motoscrubs: http://motoscrubs.com/Ducati_Manuals/4-5-speed-shop.pdf. The supplement is available here http://www.pdfmotomanual.com/index.php?r=site/getdownload&unique=60b5de45274d1c0378ca45727839e6f1.
Additional photos and information for dis/re-assembly work can be found in the owners manual http://bevelheaven.com/manuals/1968-350Scrambler.pdf
The Haynes publishing group sells a workshop manual dealing with the last yellow desmos http://www.haynes.co.uk/webapp/wcs/stores/servlet/ProductDisplay?catalogId=10001&storeId=10001&productId=27135&langId=-1 for a price seeming quite affordable. Finally, the french publisher ETAI once issued a comprehensive workshop manual under their RMT series, but in french language only. A mediocre copy was kept for download on a spanish website, but as I just realized by checking my bookmark, the corresponding page vanished.

The "missing link" is the second part of the manual I have provided a link to. I believe it collects most all the wide case Parts Manual (Catologo Ricambi) 68-73 for things other than engine or closely related to the engine. I have the Haynes manual and the other workshop manuals you mention. I am referring to a collected widecase Parts manual. The cover of Part 2 of the collected widecase Parts manual ('68-'73) looks like this:
