That may be the same thread as on the pillion footrests of the later vee twins and Pantahs, maybe Jon will know? If it is, the bolts can be found, possibly on eBay. I did buy a pair of bolts to replace the pillion footrest on my 900.

Cooperplace, I am not familiar with the Vento, so this may be irrelevant. Guzzino list rear foot pegs as 7/16" x 20 tpi it could be either UNF, or B S cycle .
I have wondered why Ducati would have used an imperial thread, it may be 11 mm, but that would seem a strange choice. Perhaps the pegs were not made in Italy ?
7/16" 20 TPI and 11 x 1.25 mm are extremely close. 7/16" = .4375-- 11mm = .4331 --- 20 tpi = .050 pitch-- 1.25 mm = .0492 pitch. The threaded socket on the frame is not what one would describe, as having a precision thread, so either size would fit,
You say your bolt supplier carefully examined it and pronounced it 12x1 mm, did he actually measure it ? If it is, as Bill comments 12x1 HT bolts are listed on the net.
I made a double size stud for my 200SS, so I could use a small acorn nut.

Brian, Ducati changed the pillion footrest thread from 7/16 UNF to 12 x 1.25 or 1.00 (I can't remember now) in the early Eighties. Strange how they liked weird threads on the footrest (the Singles rider's footrest bolts are also imperial I think, UNF or UNC?

The Vento footpegs, front and rear, if fitted, are threaded M12x1, not the 7/16 UNF used on most Ducati singles frames.
I would not think that it is necessary to have a particularly high tensile bolt to support the exhaust.
The Chinese stainless bolt would work fine.

Now that it's all together, it's surprisingly hard to get onto the stand. My old age might be a factor. My 900 has a curly piece of steel that you put your foot on, gives leverage, looks like the one on this:

No, but I've done it on another bike.
The first attempt failed. I had welded a 6mm thick, 20mm wide bar to a leg of the stand.
I thought it looked adequate but it bent in use.
Next I tried a tube about 20mm welded to the leg, with some flat bar attached to it, and a short piece of small tube for the footpiece.
That worked. Evidently tube is better at handling torque than flat bar.
