Wow, I've owned 6 Ducati singles and worked on all of them, and never came across this problem.
I think something suspicious has happened - maybe a too-tight collar over the semi-cylindrical coupling halves was forced on?
Maybe try a hot air gun.

Well as said, a few taps, WD40 and two wedges it has come off, thanks for the input everyone

Did you first try to remove the head with the bevel tube attached to it?

No, I removed the two cap heads. Is best to keep them in then?

Yes! Normally to remove the head it is best to leave the bevel shaft attached to the head and just wiggle the whole head free.
