Monza Jr - Got my title and another rim question

I bought a Jr this summer - complete, but rough and no title. In PA, there's a process called Involuntary Transfer of Title by Court Order, which is what I did. It took about three months of elapsed time and about $150, not including sales tax. Title came in the mail this week, so I can register and ride on the (side) streets when I'm done with the resto. My goal with the bike is a fun little cafe. The look will change a little, but intend to keep as many original parts as possible.

I have a so-so set of 16's on the bike with some modest pitting of the chrome. The stock rims are 16 x 1.6f and 1.85r. I was thinking I would upgrade to a set of 17's. I can get a pair of 17 x 1.85" Radaelli stainless for about $200 shipped. I will probably run a 17 x 2.75 front tire and 17 x 3 in the rear.

I was thinking the stainless would give up a little bling in exchange for lower maintenance. Any positive or negative comments regarding the stainless? The bike will only see fair weather. Also, is a 2.75 on a 1.85 rim an issue? I saw a rim/tire size chart once, but can't find it.

I've got two Ducati singles fitted with stainless rims.
They are virtually maintenance free, as well as looking similar to the original chrome rims.
They are also probably less likely to suffer from being knocked out of shape compared to aluminium rims.
As regards tyres on rims, a 1.60 rim can use a tyre size 2.25-3.10, with an optimum size of 3.00 or 3.10.
A 1.85 rim can use a tyre size of 2.75-3.60, ideally with a tyre of 3.00 or 3.10.
That looks like it fits in with what you are planning to do.
